Chobani Potluck Recipe Day #1: Chobani Chicken Salad    
During the fall months, I love nothing more than a hot bowl of soup paired with a good sandwich. One of my favorite sandwiches to make is a classic chicken salad sandwich. What I don’t enjoy however, is the amount if mayo that is traditionally used in making chicken salad. So, I found a solution! By replacing the mayo with Chobani plain Greek yogurt, I was not only able to cut the fat down in my chicken salad, but also add more protein! What results is a tasty, wholesome sandwich that perfectly complements the perfect bowl of soup when it gets chilly outside. 

Here is my recipe!

Chobani Chicken Salad Sandwich 

– 2 cooked chicken breasts, diced

– 1 small container plain Chobani Greek Yogurt

– fresh ground garlic salt to taste (I use Trader Joe’s)

– 1/2 cup dried cranberries

– 1 cup sliced celery – fresh cracked black pepper to taste

– whole wheat bread or flax tortillas by Joseph’s

1. Mix diced chicken and Chobani yogurt until fully combined. 

2. Grind the garlic salt into the mixture to the taste that you prefer. 

3. Add in cranberries and celery to the chicken salad and mix until evenly dispersed. 

4. Finish by topping with freshly cracked black pepper and serving on fresh whole wheat bread or a high protein wrap (my preference).

 5. Serve alone or with your favorite hot soup!

How Yogurt Can Be Used to Encourage Your Child to Eat New, Healthy Foods

As a mother of 3 young children, I find that meal times can be challenging no matter what time of day.  I also work as a fitness professional who specializes in health and nutrition for women and children and still find that when dinner time comes, all my toddler daughter wants is YOGURT and not the fresh plate of produce that I’ve chopped up for her.  Yogurt is a nutritious choice, but if she could have it for every meal, snack and craving, she would.  So what do I  do when this happens?  I GET CREATIVE!

My children range in age from 7 months to 6 years and each child has his or her preferences ESPECIALLY when it comes to yogurt.  With the help of Chobani Yogurt, I’ve come up with a few ideas to encourage my children to try new, healthy foods by using the very yogurt that they want to have with every meal!

Toddlers: Let Them Help YOU

My middle child is almost 2 years old and LOVES to help in the kitchen.  She is a strong-willed little lady who insists on having yogurt with every meal so when it comes to encouraging her to try new, healthy foods, I’ve decided to include her in the process of making her food.

My favorite new recipe came from a client of mine a few weeks ago for Almond, Coconut, Gluten-Free Pancakes.  As Chobani Greek Yogurt is also gluten free and comes in a variety of kid-friendly flavors, making this recipe with my daughter is not only fun, but also delicious!

The recipe:

Almond, Coconut, Gluten-Free Pancakes using Chobani Banana Greek Yogurt

almond coconut pancakes

1 1/2 cups almond flour

2 T coconut flour

3/4 t baking soda

1/4 t salt

6 eggs

1/4 cup Chobani Banana Greek Yogurt

2 T honey

1 T vanilla extract

1 T oil/fat (olive oil, butter, coconut oil, or ghee)

Instructions:

1. In a large bowl, mix the dry ingredients together.

2. In a medium bowl, whisk the wet ingredients together.

3. Pour the wet ingredients into the dry ingredients and whisk until well combined and smooth.

4. Grease a griddle or skillet generously, and ladle batter onto griddle, forming 4-inch cakes.

5. When bubbles form, flip & cook until done.  Feel free to top with additional Chobani Banana Greek Yogurt along with Fresh Maple Syrup and a side of fresh strawberries.

Kids: Make Lunch Time FUN

I pack my 6 year old son’s lunch and snack everyday for lunch and one of things he requests is that his lunch is fun!  So does this mean that I make pinterest-worthy faces in his sandwich?  Well, tempting as that is, no I don’t.  Instead, I use yogurt as a way to continue to get creative.

Finding ‘ME’ Time as a Stay-At-Home Working Mother of 3

Today was one of the busiest days I’ve had in a long time. (And it’s still not over!). Feeling grateful for the opportunity to work from home doing what I love and not have to commute to and from work in this godforsaken snow. Plus, there’s the added bonus of being home with my children.

But, I’ve gotta make it all work and sneak in time for myself which can be especially difficult with three children.

Here’s how I made today work:

6:15am – Yoga (me time before kids wake)
8:00am – School Drop Off
8:30am – Cardio (fun me time with kids)
9:15am – Family Snack Time
10:00am – study, lecture and exam
11:30am – Lunch Prep
11:45am – Family Lunch while doing online work
12:15pm – Get Kiddos into naps
1:00pm – Teach Butts and Guts (believe it or not, me time!)
1:50pm – Feed & change screaming baby
2:30pm – Husband offered to pick up son from school and take him to after school activities. Record Workouts for clients instead while baby coos and giggles at me.
4:00pm – Dinner Prep
5:30pm – private client (cxcl’d) – played
Candy Crush while daughter cheered me on.
6:00pm – dinner
7:00pm – teach Arms & Abs (me time again!)
7:50pm – help son fill out Valentine’s
8:30pm – LATE bedtime routine (baths, teeth, feedings, changing)
9:00pm – kids and husband to bed. (Daughter is still boycotting as I post this and giving me the stare down guilt trip face)
9:30pm – Edit Workout Videos while sipping favorite tea and eating chocolate or toasted coconut.
10:00pm – BED.

There are a couple of things in my schedule that are hard set and immovable. These include my morning yoga, morning cardio, meal times and my bed time. Without these in the foundation of my day, the rest of my day suffers as does my attitude. The reason why I work from home is so that I can spend more time with my children and be available to them when they need me. If I’m not caring for myself and having moments to “timeout” during the day, then I can’t function. Now granted, I’m one of those people who enjoys the challenge of staying incredibly busy, so this works for me, but it really is all about balance. While I consider teaching classes “me time” it’s only because I truly love what I do. Do I teach/train clients every day? No…but on those days, I replace the time I’d normally use working with something else that I love that very well may not be work related.

On most days, this is some kind of exercise or play with my children where I have to stay active. Doing cardio in front of my kids not only teaches them that exercise is fun, but it also makes them laugh. (What else is sillier than watching mommy jump up and down?) On other days, it’s painting, knitting or just sitting and playing blocks with my daughter.

Whatever it is, I have to enjoy it. If I don’t enjoy what I’m doing, I forget to enjoy those in my life that I love the most who make it their first priority to grab my attention and spend some time with me. These little reminders serve to keep me present and always remember that self care comes before anything and anyone else. It’s THAT important.

I’ve Never Been a Fan of Yoga…Until Tonight

I’ve always been one of those people that has found yoga a bit underwhelming.  The standing still…the heavy breathing…the sweaty air…and sometimes the passing of unpleasing gas from fellow yogis has always left me feeling, well a little less than thrilled.  Well, tonight all that changed.

After feeling incredibly sore after teaching my Butts & Guts Class last night, I knew that tonight’s workout would need to be a recovery workout.  But, I didn’t feel like doing your run of the mill foam roll and stretch session, so I decided to take a gander at some yoga apps in the iTunes Store.  I clicked on a few here and there, not really finding any of them appealing.  Then I clicked on FitStar Yoga. The reviews were ok, and I had just gotten both of my youngest babies asleep, so I decided to give it a try.  (It was also a free download)

To start, it took me through a fitness test that was 18 minutes long and 46 poses in total.  I was able to rate the difficulty of each pose as I went through the fitness test much to my surprise, I was finding myself relaxing AND getting a great stretch.  So, I kept going and before I knew it, found myself looking for the next workout.

Scrolling through, I found more workouts, but the ones I wanted to try were locked so I thought maybe I’d check out the membership option…you know…just incase I might want to TRY this yoga thing.  WELL…I’m hooked.

This Morning My Son Taught Me One of Life’s Greatest Lessons. And it Broke My Heart.

This morning was one of those warm, rainy, drizzly days where you think you can walk through it without getting wet, but before you know it you’re drenched.  I was going through my normal morning routine with my three children, just trying to get them out the door to take my son to school so I could make my way to the grocery store.  With the normal hiccups of the morning (getting my daughter into her stroller, getting the stroller down the stairs, etc) I asked my son for help per usual.  He’s a bit of a daydreamer which I actually love, but on mornings like this, it just served as an irritant for me.  I had to ask him repeatedly to put down his umbrella to help me bring the stroller down the stairs which at the time seemed like an unachievable task to him.  He finally did it, but there was a quiver of the lip after my not so gentle requests for him to “hurry up” and “get it together”.

After that small hiccup, we were on our way in the rain to school.  No more than 20 steps into our walk, I hear whimpering.  My son had begun having issues with his umbrella and couldn’t keep up with me.  The whimpering turned into whines, and the whines into “I JUST CAN’T DO IT!!” followed by sniffles and crying.  *sigh*  I’m not one who’s against crying, but nothing irritates me more than whining and crying over EVERYTHING.  I’m one of those people that bulldozes through every frustration and I unrealistically expect the same of my son.  However, what I said was, “You CAN do this.  Now, get it together and follow me.  You’re going to be late if we don’t stop this nonsense.”  I just called my son’s feelings nonsense.  Shit.

My son’s face clearly showed not just frustration now, but the beginnings of defeat.  His head hung low, and his little feet rushing to catch up to my long and speedy stride, I just hoped that he would shake it off and make it to school.  But could I leave it alone?  Nope.  I kept trying to give him advice.  I mentioned how he was a big boy now.  How he couldn’t act like this when he begins his taekwan-do lessons next week.  And THIS and THAT and THIS and THAT.  I was THAT mother.  The nagging, irritating, commanding mother.  What happened next broke my heart.

He just stopped and started sobbing.  And really sobbing from his heart.  Not the whiney, whimpers that I heard earlier.  True sadness pouring from his little body.  I stopped in my tracks.  I no longer cared if we were going to be late.  Locking the stroller, and slowly crouching down, I opened my arms and just held him.  Feeling his tears trickle down my neck I knew I needed to listen to the small, gentle boy that I call my son.  So, I asked him, “What’s wrong?  Why are you crying?”  He said, “I’m crying because I’m hurting.  That’s what you do when you hurt.  You cry.  I’m just trying to be 6.  And…I feel really bad about myself.”  He broke down crying again and I about started crying myself as I held him.

I looked into his ocean colored eyes and really looked at him.  He’s still a baby.  He’s my baby.  With the other two babies that I have, I’ve forgotten that he’s still one himself.  Studying his little face, I began to say the words to him that I should’ve said a long time ago.  I said:

“I want you to listen to me…and listen to me closely.  You are stronger than you know.  Do you know why?  Because you’re you.  I know you feel weak sometimes.  That is ok.  But you need to remember that you aren’t weak.  You are strong.  And you are beautiful.  Do you know why you are strong?  Because I am strong.  Because you’re my boy.  You will always be my boy.  I want you to know something else.  When I was little, I cried too.  I cried a lot but was told not to cry.  That’s why I said those words to you.  And you know what?  I was wrong.  You were right.  When it hurts inside, you do cry.  And that’s okay.  I love you little man.”

This was one of the first times my son listened to me with his eyes locked with mine in a very long time.  He took every word I said and let it soak in just like he did all the other times I used those rushed words of hurry, worry and anxiety.  In fact, what I fail to realize on a daily basis is that he listens to EVERYTHING I say.  And he takes it to heart.  And what I was saying was making him hurt.  After a hug, a kiss, and another ‘I love you’, we began making our way to school again.  About a block away from where we last stopped, I hear, “mama?”  to which I said, “Yes little man?”  “I’m still sad.”  I figured he would be a little sad, but the reason why is what blew me away.  I stopped again to face my little guy and asked “Why?”  He looked at me with his wide innocent eyes, and said, “Because I didn’t know I was special.  I thought I couldn’t be special until I was a big person.”  *heart breaking again*

To this I replied:

“You are especially special because you AREN’T a big person.  You’ve been special from the very day you were born and will continue to be special everyday from there forward.  Do you know why you are special to me?   You were my first baby.  Before you, I wasn’t a mama.  That means you are forever special to me in my heart.  You will always be my first baby.  My special baby boy.”

A hint of a smile crossed his face and a flicker of the glimmer in his eye returned.

When we arrived to school I told him that I wanted him to remember two things today.

Number 1: You ARE Special

Number 2: I love you.

We repeated those two reminders a few times before parting ways this morning.  This is a morning that I will never forget.  Not because it was raining.  Not because we were going to be late.  But because today, I was forced to take a good hard look at myself and realize that I have a lot to learn about what it means to be human.  To allow myself moments to cry.  To allow myself moments to feel weak.  To allow myself to make mistakes and not yell at myself for them.  To allow myself the time to stroll instead of hurry.  But most of all…to take moments to stop and listen to my son because what he’s thinking and feeling comes directly from his heart.  And that alone in itself is something that can’t be taught.  It must be felt.  With all my heart.
