Fried Noodles – the healthy way

Well looking back you might notice that I post a lot of Asian recipes. Well that’s because firstly I absolutely love the simplicity of them, but also because they are very healthy for you, particularly east and south east Asian cuisine. For this healthy version of fried noodles you need to slice the vegetables fairly thinly. If you don’t want to manually slice and dice your vegetables you can use a store bought packet of pre sliced stir fry vegetables or any hard vegetables for that matter. So here goes, another Asian dish. This recipe serves 2.


  • sunflower/vegetable oil
  • 1/2 medium onion sliced
  • 3-5 cloves garlic sliced
  • 2 inches of fresh ginger thinly sliced
  • 1 tsp paprika
  • pinch of chilli powder
  • 2 nests of dried egg noodles
