Chobani Potluck Recipe Day #1: Chobani Chicken Salad    
During the fall months, I love nothing more than a hot bowl of soup paired with a good sandwich. One of my favorite sandwiches to make is a classic chicken salad sandwich. What I don’t enjoy however, is the amount if mayo that is traditionally used in making chicken salad. So, I found a solution! By replacing the mayo with Chobani plain Greek yogurt, I was not only able to cut the fat down in my chicken salad, but also add more protein! What results is a tasty, wholesome sandwich that perfectly complements the perfect bowl of soup when it gets chilly outside. 

Here is my recipe!

Chobani Chicken Salad Sandwich 

– 2 cooked chicken breasts, diced

– 1 small container plain Chobani Greek Yogurt

– fresh ground garlic salt to taste (I use Trader Joe’s)

– 1/2 cup dried cranberries

– 1 cup sliced celery – fresh cracked black pepper to taste

– whole wheat bread or flax tortillas by Joseph’s

1. Mix diced chicken and Chobani yogurt until fully combined. 

2. Grind the garlic salt into the mixture to the taste that you prefer. 

3. Add in cranberries and celery to the chicken salad and mix until evenly dispersed. 

4. Finish by topping with freshly cracked black pepper and serving on fresh whole wheat bread or a high protein wrap (my preference).

 5. Serve alone or with your favorite hot soup!

Finding ‘ME’ Time as a Stay-At-Home Working Mother of 3

Today was one of the busiest days I’ve had in a long time. (And it’s still not over!). Feeling grateful for the opportunity to work from home doing what I love and not have to commute to and from work in this godforsaken snow. Plus, there’s the added bonus of being home with my children.

But, I’ve gotta make it all work and sneak in time for myself which can be especially difficult with three children.

Here’s how I made today work:

6:15am – Yoga (me time before kids wake)
8:00am – School Drop Off
8:30am – Cardio (fun me time with kids)
9:15am – Family Snack Time
10:00am – study, lecture and exam
11:30am – Lunch Prep
11:45am – Family Lunch while doing online work
12:15pm – Get Kiddos into naps
1:00pm – Teach Butts and Guts (believe it or not, me time!)
1:50pm – Feed & change screaming baby
2:30pm – Husband offered to pick up son from school and take him to after school activities. Record Workouts for clients instead while baby coos and giggles at me.
4:00pm – Dinner Prep
5:30pm – private client (cxcl’d) – played
Candy Crush while daughter cheered me on.
6:00pm – dinner
7:00pm – teach Arms & Abs (me time again!)
7:50pm – help son fill out Valentine’s
8:30pm – LATE bedtime routine (baths, teeth, feedings, changing)
9:00pm – kids and husband to bed. (Daughter is still boycotting as I post this and giving me the stare down guilt trip face)
9:30pm – Edit Workout Videos while sipping favorite tea and eating chocolate or toasted coconut.
10:00pm – BED.

There are a couple of things in my schedule that are hard set and immovable. These include my morning yoga, morning cardio, meal times and my bed time. Without these in the foundation of my day, the rest of my day suffers as does my attitude. The reason why I work from home is so that I can spend more time with my children and be available to them when they need me. If I’m not caring for myself and having moments to “timeout” during the day, then I can’t function. Now granted, I’m one of those people who enjoys the challenge of staying incredibly busy, so this works for me, but it really is all about balance. While I consider teaching classes “me time” it’s only because I truly love what I do. Do I teach/train clients every day? No…but on those days, I replace the time I’d normally use working with something else that I love that very well may not be work related.

On most days, this is some kind of exercise or play with my children where I have to stay active. Doing cardio in front of my kids not only teaches them that exercise is fun, but it also makes them laugh. (What else is sillier than watching mommy jump up and down?) On other days, it’s painting, knitting or just sitting and playing blocks with my daughter.

Whatever it is, I have to enjoy it. If I don’t enjoy what I’m doing, I forget to enjoy those in my life that I love the most who make it their first priority to grab my attention and spend some time with me. These little reminders serve to keep me present and always remember that self care comes before anything and anyone else. It’s THAT important.
